Bee’s Knees are typically associated with the summer, but we’ve deepened the flavor to stand up to a cold winter night with the addition of rosemary.
Bee’s Knees
2 parts gin
1 part flavored simple syrup
1 part lemon juice
Shake gin, simple syrup and lemon juice over ice and strain into coupe glasses.
Flavored simple syrup: Bring 1/2 cup water to a boil. Reduce heat to a very low simmer and whisk in 1/2 cup of honey. When the honey is dissolved, add 1 tbsp dried culinary grade organic lavender and four sprigs of fresh rosemary. Continue to simmer for 3-5 minutes. Remove from heat and allow to steep for at least 15 minutes. Store in the refrigerator for up to 2 weeks.
